237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
One egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)

● Cake finished size ( 15cm*7cm )

● Chocolate Biscuits

8 g muscovado sugar (2 tsp)
2ml vanilla extract
1 egg white
23g white sugar (2Tbsp)

25g cake flour ( 3 Tbsp )
5g cocoa powder ( 1tsp )

sugar powder

● Chocolate Croquant
30g milk chocolate ( 3 Tbsp )
15g Lotus spread ( 1 Tbsp )
(or Nutella)
Rice Croquant 20g ( 3 Tbsp )
20g chopped hazelnuts ( 2 Tbsp )

● Chocolate Mousse Cream
yolk 3
30g sugar ( 2 Tbsp + 1 tsp )

100g milk ( 1/3 cup + 1 Tbsp + 1 tsp)
110g heavy cream ( 1/3 cup + 2 Tbsp )
5 ml vanilla ( 1 tsp )

5g powdered gelatin (1tsp+1/2tsp)
25 g water ( 1 Tbsp + 2 tsp )

150g dark chocolate ( 1 cup )
150g white chocolate ( 1 cup )

Chocolate Liqueur 5ml ( 1tsp )

440g heavy cream (220g + 220g)
(220g= 3/4 cup +2 Tbsp + 2 tsp )
