Chocolate Sponge Cake Recipe

▼ Ingredients Diameter 18cm
3 eggs
90 g caster sugar
30 g milk
70 g cake flour
20 g cocoa powder
20 g plain chocolate (50 – 55%cacao)
20 g vegetable oil

80 g plain chocolate (50 – 55%cacao)
250 g heavy cream
10 g caster sugar

50 g water
30 g caster sugar

▼ Directions
Chocolate sponge
①Sift the (cake) flour and cocoa powder.
②Melt chocolate and vegetable oil in a double boiler.
③Mix egg with caster sugar. And then, heat it up to about 40℃ in a double boiler.
④Beat the mixed egg well with an electric hand mixer.
⑤Add the milk to the egg, and mix it. After that, add powder and mix lightly.
⑥Add ② to it, and mix it. And then, pour it into a mold(Diameter 18cm). Bake it at 170℃ for 25minutes in the preheated oven.
⑦Once chocolate sponge becomes cool, slice it into three equal parts.

Chocolate whipped cream
①Chop chocolate up and melt it in a double boiler.
②Add the fresh cream little by little and mix it. And then, Add caster sugar .
③Whip it while cooling the mixing bowl with ice water.

Syrup
①Mix water and sugar, and heat it up in the microwave.

Makeup
①Brush the syrup over the chocolate sponge to be well soaked in it. Put chocolate whipped cream between the chocolate sponges.
②Sprinkle chocolate on the cake.
