How To Make Pumpkin Cupcakes

Ingredients (cupcakes batter)
1 and 1/2 cup (180 g) of All-purpose flour
1/2 cup (120 g) Vegetable oil like Canola
2 large eggs
9 oz (240-250 g) Bought Pumpkin puree or homemade fresh pureed pumpkin (not pumpkin pie filling)
1/4 (50g) of Granulated sugar
1/2 cup (100 g) Dark Brown sugar
1/2 teaspoon of Baking soda
1 teaspoon of Baking powder
1 and 1/4 teaspoon of ground cinnamon (plus 1/2 tablespoon for dusting the cupcakes)
1/4 teaspoon of Ground Ginger
1/4 teaspoon of ground cloves
1/2 teaspoon salt
1 teaspoon of pure vanilla extract

Cream cheese frosting:
11 oz (300 g) Full fat Cream cheese (we used Philadelphia)
1 and 1/3 cup (150 g) of Confectioner sugar
2/3 cup (150 g ) of Unsalted butter (SOFTENED)
1 teaspoon of corn starch
1 teaspoon of vanilla sugar or vanilla paste
a pinch of salt

Marzipan pumpkins – about 20 pieces
2 oz (55 g ) of Marzipan
a few drops of gel food coloring (orange)
1 tablespoon of Roasted Pumpkin Seeds
